MS Exchange 5+ has a server-side configuration that allows an Admin to globally set line wraps. This will apply to *all* email regardless of format (plaintext, rich-text, HTML). If an MUA is locally set to wrap at line 'xx' and it exceeds Exchange's setting then Exchange will also break the line further.
