Sure there is -- just preface your messages with a line stating:

If this document appears to be misaligned, please set
your mailer to a non-proportional font such as Courier 10.

That's what we do with our subscription forms (which include a great deal
of columnar data), and we haven't had any problems.  We don't send MIME
messages.
