I do not like to disagree with Ben but as far as we are concerned it has absolutely nothing to do with the email client. Many people are completely anti anything Microsoft. 
The correct email is in the List Address. 
We have now about 100 lists country wide (UK) and thousands of emails with all lists set up the same way. I look after about 45 in the back ground. 
We advise all our new list owners accordingly.

I have no idea how it works but it does and saves the typing of the long email address.

  No.  To do so would be a violation of internet email Standard RFC822 (and the
  newer RFC2822).  LISTSERV generally will obey all applicable internet email
  standards and will not allow you to do something non-standard like this.  This
  standard requires there be a (syntactically) valid email address in the To:
  and From: fields of any email message.  The From: address represents the
  author of the message.  The To: field contains the List-Address.  There may
  also (optionally) be a descriptive name (such as the List title in To: and the
  user's name in From:) in addition to the required email address.

  Even if you could cause LISTSERV to do this, most anti-spam filters will
  discard the email as malformed (non-standard and therefore likely to be spam)
  so many of your messages won't get delivered.

  If/when this occurs, it is strictly a function of the user's email client
  program (typically a Microsoft mail client such as yours:
   X-Mailer: Microsoft Outlook Express 6.00.2800.1437)
  and has nothing to do with any settings in LISTSERV.
