We probably have different requirements but my situation is like this.
I have about 500 lists. I probably spend 5 percent of my time managing them.  The difference is probably on how the lists are setup and how critical correct email addresses are.

We create forms and web page links to let people add and remove themselves. Although even with instructions that doesn't always work. I manually do the change then. I always have the web interface to the listserv open.
Every email we send out has the unsubscribe link in it.

The name change part is probably the difficult part. Most often though the end user places a forward on the old address to the new address. But on a few occasions I do commit to a global manual change for someone.

With so many lists I don't have time to fix all the email addresses that daily change/forward to a new address. In those cases I am bulk removing those addresses from the installation based on the content of a daily monitoring report or the auto delete feature. And if someone is removed by accident they can resubscribe themselves.

It should work for all lists that they own.
