The name already is in the Sender header and usually in the Reply-to header
as well.  Some lists have names that are MUCH longer than "FOOD" (this one
for example is "list owners' forum").  Putting the name on the subject line
wouldn't leave much room for an actual subject on many lists--and some
folks seem to like to include 10 words or more on a subject line :-)  In
addition LISTSERV already provides for subject lines beginning with a topic
name followed by a colon, soo... if list name AND topic were on subject
lines would there be any room for "subject?"
 
MOST (not all I gather) mail clients list (or have the option to list) both
Sender (or From) and Subject headers on a listing of receive mail.  Eudora
Pro (and others) are programmable so that mail from different lists can be
automatically sorted into "mailboxes" for each list.  Methinks it might be
preferable to adopt a mail client that does what you'd like than try and
over specify the headers mailed by a list.
