That merely creates a separate Eudora mailbox.

To save the message(s) as a standalone text file, select them in the
mailbox display (or, if only one is involved, you can just have it
open and staring at you) and select Save as... from the File menu.
You can then choose whether or not to include headers and best
guesses at paragraph structure.
