We use Exchange 2010 at L-Soft and I have never seen a winmail.dat generated by our systems. I assure you that we do send a lot of attachments :-) I have always thought this was a legacy feature of older Exchange versions (we did not start using Exchange until 2007). Perhaps if one was previously running, say, Exchange 2000, and upgraded to 2010, a legacy setting was retained or something like that. The problem with winmail.dat is that it is opaque to non-Exchange users and people think it might be a virus or other harmful file. It would really be best to configure Exchange not to create this attachment.
