You would need to effectively subset by checking the date of the most recent (100th) entry returned.  Then, you issue another

S * IN listname WHERE SENDER CONTAINS NIH.GOV SINCE yyyy-mm-dd

Repeat until you have less than (or perhaps equal to) 100 entries.

The syntax is very flexible and you can specify a date and/or time in just about any of the commonly used formats:
