When logged into Yahoo! Mail, I found an Options link. Hitting it took me to
a page with different categories of options in colums labeled "Spam,"
"Management," and "Premium Services."

Under "Management" I find a General Preferences link to an HTML form page.
On that, under the Composing E-mails heading, there are a pair of radio
buttons labeled Mode. The choices are
 - Compose messages as color and graphics
 - Compose messages as plain text

Switching to plain text and hitting the Save button at the bottom of the
page made the change. My next trial sent from that mail account came as
plain text. As the sample below my signature will show, that doesn't
eliminate the extra header material.

Did the Yahoo! user who sent plain text have that stuff in the header? If
so, that would confirm suspicions already raised that the header isn't the
issue.
