Not all e-mail clients are capable of interpretting MIME format digests
(or for that matter, MIME format ANYTHING). As a result, you may want to
also add a default option of NoMIME and include in the welcome message a
way to change this if people are able to and want to better utilize their
particular e-mail client.
To change from a NoMIME to a MIME subscription, I think all you need to do
is send to listserv:
SET listname MIME
