I think the reason it doesn't show the "by way of" is that you're
using a "personality" to do this, not a "redirect".
BTW, it did exactly what I thought it would have done in this case,
i.e., sent it to you for approval.

Yes, in the "Received:" entry that was added by your mail server when
it processed the message from your machine. It shows to us humans
that a machine with IP address 24.1.8.189 originally sent the message
to that mail server, but neither your e-mail address, nor the domain
name identified in it are to be found anywhere in your original
message headers.
