Probably *possible*, but I'm not sure you'd want to do it.  The secret is
to use Sendmail and do a lot of hacking with the 'relay' options - note that
this will probably result in ALL mail from your Listserv box being forwarded
to the mailserver for delivery.

Can you explain why you want to do this?

Given the performance you can get out of even cheap Unix hardware, I'm not
clear why you would want to introduce the added complexity.  I've been
pumping anywhere from 250K to 400K pieces of mail through an RS6000-250,
which is only a 66mhz PowerPC chipset.
 
Remember, you'll have to balance the cost of the hardware against the cost
of maintaining the configuration - and you only buy hardware once, but
manpower costs you every payday....
